    The Story Behind the Sauce
    The Carolina Reaper is a challenging little pepper to work with for a myriad of reasons. Finding balance between the fire & flavor, and working to integrate the slightly bitter notes of the Reaper in a savory sauce wasn't easy.
    I never want to make a sauce where I have to fight to mask the flavor of the main ingredient with heaps of salt or sugar, as that runs counter to everything I believe as a sauce-maker.
    After months of prototyping, Hell Hound features the Carolina Reaper while enhancing the pepper's flavor with subtle sweetness of mango, tartness of tamarind & a selection of savory spices, while rounding it out with savory roasted garlic. 
    The resulting sauce is incredibly aromatic, provides a long-lasting burn & brutally building heat. 
    For an all-natural sauce with no extract, it definitely holds its own in the world of borderline unnecessarily hot sauces, while not being so horrifically hot that it drowns out your meal (or sends you racing for the milk & antacids!) 
    Once the recipe was finalized, I reached out to an old friend to help with the label. Co-creator of Transmetropolitan, Happy, and The Boys (Now a fantastic show on Amazon Prime!) Darick Robertson and I go all the way back to high school. I didn't know if he'd have the time or inclination to work on a label, and I was delighted to hear he was excited about the idea. He graciously offered to draw the gorgeous, whimsically evil background & I am as in awe of his talent as when we were teenagers.
    Long-time Lucky Dog collaborator & graphic artist extraordinaire Kara Thauer lent her tremendous talent to add color to the background & embellishments to the Dog/Horseshoe logo to make Lucky just a little more devilishly handsome.
    The collaboration resulted in yet another amazing piece of art to adorn my hottest sauce to date. I am eternally grateful to them both for their heroic efforts.
